About STUFT Gourmet Baked Potatoes

STUFT Gourmet Baked Potatoes was first opened in April 2014. It is a food truck based out of Raleigh, NC that specializes in Gourmet Stuffed Baked Potatoes. The owner, Stephanie Ruggiro, is 26 years old and a college graduate from The University of North Carolina Wilmington. With her parents’ help, she was able to create STUFT from start to finish and build the food truck that she had always imagined. Brewgaloo in Downtown Raleigh, was her first event which was held on April 26, 2014.

Here’s our menu:

Asian Short Rib with melted mozzarella
Slowly braised short ribs with an oriental flare. Hints of orange, soy sauce, garlic, and ginger
(Finished with sriracha)

Buffalo Chicken and Ranch with melted mozzarella
Slowly cooked seasoned chicken in a tangy buffalo sauce

Meatball Parmigiana with melted mozzarella (seasonal menu item)
Homemade meatballs simmered in a rich tomato sauce

Creamed Spinach with melted cheddar
Fresh organic baby spinach sautéed in a creamy sauce with a hint of nutmeg

Broccoli Soufflé with melted Cheddar
Fresh broccoli and cheddar combined in a rich creamy sauce baked in the oven

Bacon Cheddar Ranch
Crispy bacon served with melted cheddar and ranch dressing

Garlic Roasted Veggies (seasonal menu item)
Broccoli, Cauliflower, and carrots oven roasted with fresh garlic and olive oil

Loaded Beef Taco
Taco seasoned ground beef topped with cheddar cheese, jalapeno peppers, sour cream, and salsa

Jalepeno Habenero Bullets
Fresh mashed potatoes combined with, fresh jalepenos, habeneros, cream cheese, and cheddar cheese breaded and deep fried
Served with Ranch Dressing

Bacon Maple Cheddar Bombs
Fresh mashed potatoes combined with bacon, maple syrup, and cheddar cheese breaded and deep-fried.
Served with homemade maple mustard dipping sauce.

Canjun Wedges
Potato wedges deep fried and finished with our special cajun spice blend
Served with your choice of ketchup or ranch dressing
